What are pistachios?

Pistachios are not actually nuts. The little green food is actually the seeds of the pistachio tree fruit. Although pistachios belong to the same family as cashews, they are also botanically related to sumac, mango, and poison ivy.

They are native to Iran, Syria, and Greece and are more than 10,000 years old. In Iran, pistachios are called "smiling pistachios", while in China they are called "pistachios" because of their half-open shells. By the way, this opening means that the pistachios are ripe and ready to be harvested. 

It wasn't until after World War II that farmers in California began to grow pistachios grown in the United States. Today, in the United States, you'll find them growing in California, Arizona, and New Mexico.

While they are available in stores year-round, most pistachios grown in the United States are hand-harvested between late August and early October. Harvesting pistachios involves shaking the branches and picking up the shelled pistachios from the ground as they fall off the tree and ripen.

How to cook with pistachios?

Pistachios can be shelled. You can eat them as-is, but you can also add them to sweet and savory recipes, including crackers, salads, and fish or chicken breadcrumbs. You can also bake shelled and unshelled pistachios with different seasonings. Just mix them in a bowl with the spices of your choice (for shelled pistachios, you'll need to add more), place them on a cookie sheet and bake at 350 F for about 25 minutes.

Pistachios are available year-round on almost any website that sells products online and in offline supermarkets. Look for their snacking aisle as well as their roasting aisle in nuts. You'll find a wide variety of pistachios sold both in and out of the shell, raw, roasted, salted, unsalted, and even in different types of flavorings. For culinary purposes, it is usually best to buy raw or unsalted pistachios.

If you're buying nuts in their shells, make sure the shells are ivory-colored and only have one end open. Pistachios with large openings are often spoiled, and unopened shells may be unopened and unripe.

Storage

How to store pistachios depends on whether you buy shelled or shelled nuts. 

Shelled pistachios will stay fresh for up to three months in the pantry or refrigerator. You can also freeze unshelled pistachios for up to a year. After thawing, if you notice that the pistachios are no longer crunchy, you can place them on a baking sheet in the oven and bake them at 200 F for 10 to 15 minutes.
